This coffee takes its name from the department in which it is grown, Matagalpa, and the adjective Gran stands for its development once roasted, its spectacular taste and aroma and its 19 sieve.The cherries are picked by Finca La Verona located in the El Arenal Nature Reserve in the Cordillera Isabelia, one of the few forest nature reserves of Nebliselva in Nicaragua.The cherries grow under dense forest shade, this leads to a slow ripening allowing each bean to incorporate more flavor and aroma. The harvest begins in December with the end of the rainy season and the beginning of the dry one. The harvest is done completely by hand starting from the plants located at the lowest altitudes, while those at higher altitudes that need more time for the cherries to ripen are generally harvested around May/June.
